Our waffle is gluten-free and plant-based, made using tofu, konjac, and koji. We have also achieved a "mochi-mochi" (chewy) and "fuwa-fuwa" (fluffy) texture by using a paste-like konjac material called NINZIA PASTE.
With the new cocoa flavor, you can enjoy an exquisite balance of sweetness and a hint of bitterness. By adding cocoa powder, we have created a deep, rich flavor full of mellow aroma and body (koku).
The Development Story
The Tofu Waffle was born from the desire to create something delicious for those who have difficulty with wheat flour, as well as for vegetarians and vegans, and it has become a product loved by many. However, precisely because it's something people might eat daily, our wish for them to have more variety and enjoyment inspired the development of a new flavor.
The flavor we chose was "Cocoa." Cocoa powder is low in fat yet offers a chocolate-like flavor, and its compatibility with tofu was outstanding. However, to maximize the cocoa's flavor, we needed a way to draw out its natural sweetness. Through repeated trials, we were able to discover the perfect balance between bitterness and sweetness.
The final Cocoa flavor is a product that combines a light texture with a gentle sweetness. It is a creation we are confident that fans of the original Plain flavor will also enjoy as a new discovery. We have perfected a healthy, delicious, and exciting Tofu Waffle Cocoa flavor that will bring a little thrill to your everyday life.

■『豆腐ワッフル ココア味』の特徴
当社のワッフルは豆腐・こんにゃく・麹を使用しており、グルテンフリーかつプラントベースのワッフルです。また、NINZIA PASTE というペースト状の蒟蒻素材を使うことでもちもち・ふわふわとした食感を実現することが出来ました。
今回のココア味では、絶妙な甘さとほろ苦さをお楽しみいただけます。また、ココアパウダーを加えることで、芳醇な香りとコクにあふれる深みのある味に仕上がりました。
■開発秘話
「小麦粉が苦手な方やベジタリアン、ヴィーガンの方にも美味しく食べてほしい」という想いから生まれた豆腐ワッフルは、多くの方に愛される商品となりました。しかし、毎日食べるものだからこそ、もっと楽しんでもらいたいという思いが新しいフレーバーの開発を促しました。
そこで選ばれたのが「ココア味」。ココアパウダーは低脂質でありながらチョコレート風味が楽しめ、豆腐との相性も抜群でした。しかし、ココアの風味を最大限に活かすためには自然な甘みを引き出す工夫が必要で、試作を重ねる中で「苦味」と「甘さ」の絶妙なバランスを見つけることができました。
